Spicy Tomato & Lentil Soup

Recipe makes one portion but can easily be factored up to make extra.

Ingredients:

  • 1 carrot chopped

  • ½ a red onion chopped

  • 1 clove garlic

  • ½ tsp cinnamon

  • ½ tsp cumin seeds

  • ½ tsp turmeric

  • 1 tsp olive oil

  • 1 tsp tomato paste

  • ½ jar roasted peppers chopped

  • 300ml veg stock (½ tsp stock)

  • 100ml tinned coconut milk

  • 100g tinned chopped tomatoes

  • 30g dried red lentils

  • Spinach or other seasonal greens

Method:

  • Fry carrot, onion, garlic and spices in oil for 5 mins

  • Pour in stock, coconut milk, tinned, tomatoes, lentils and peppers.

  • Bring to boil and simmer for 12 mins or until lentils are cooked.

  • Remove from heat and blend

  • Add winter greens, stir through to wilt.
