Quinoa Eggs with Dukkah

Recipe makes one portion but can easily be factored up to make extra.

Ingredients:

  • Quinoa 50g

  • Eggs boiled or poached 1 or 2 (depending how hungry you are!)

  • Roasted peppers ½ jar

  • Dukkah (see simple recipe here)

  • Optional salad leaves / chard / spinach (depending on season)

Method:

  • Boil quinoa for 15 minutes and drain.

  • Make Dukkah if not already in the cupboard.

  • Poach or boil the eggs.

  • Arrange quinoa, salad (if using) eggs and peppers on plate, sprinkle liberally with Dukkah.

  • Any remaining Dukkah can be kept in a jar for future meals.
