Anchovy & Mushroom Pasta

Recipe makes one portion but can easily be factored up to make extra.

Ingredients:

  • 40g mushrooms

  • 4 sundried tomatoes

  • 1 tsp olive oil

  • 1 finely chopped clove garlic

  • 50g dry weight fusilli

  • 3 anchovies finely chopped

  • ½ a tin fava beans (drained & rinsed)

  • salad / baby spinach leaves (any kind)

Method:

  1. Cook pasta in boiling water for 6 mins.

  2. Meanwhile warm tomatoes, mushrooms, garlic in the oil in a pan for 3 mins. 

  3. Mix ingredients (except salad) with 1tsp olive oil. 

  4. Serve on a bed of salad.
