Brown Rice Noodles with Tofu

Makes 4 portions

Ingredients

  • Clean Bean Tofu Block cut into cubes*

  • Onion chopped

  • Garlic

  • Marinade / stir fry sauce

  • Brown Rice Noodles approx 250g*

  • Seasonal Vegetables chopped eg spring greens, mushrooms, spinach

Method

  • Marinade tofu in seasoning / stir fry sauce

  • Meanwhile bring pan of water to the boil and place noodles in pan.

  • Turn off heat and leave noodles for 10 mins.

  • Stir fry onion and garlic until soft remove from pan

  • Fry off tofu until crispy on the sides, remove from pan

  • Stir fry vegetables. Add those that will take the longest first.

  • Combine all ingredients, including ant extra marinade / sauce, back in pan including the noodles.

  • Serve
