Brown Rice Noodles with Tofu
Makes 4 portions
Ingredients
Clean Bean Tofu Block cut into cubes*
Onion chopped
Garlic
Marinade / stir fry sauce
Brown Rice Noodles approx 250g*
Seasonal Vegetables chopped eg spring greens, mushrooms, spinach

Method
Marinade tofu in seasoning / stir fry sauce
Meanwhile bring pan of water to the boil and place noodles in pan.
Turn off heat and leave noodles for 10 mins.
Stir fry onion and garlic until soft remove from pan
Fry off tofu until crispy on the sides, remove from pan
Stir fry vegetables. Add those that will take the longest first.
Combine all ingredients, including ant extra marinade / sauce, back in pan including the noodles.
Serve
