Flatbread (Simple)

Makes 8 individual flat breads. These can be frozen, or adjust the recipe if you need more / less.

Ingredients

  • 400g plain flour

  • 4 tsp baking powder

  • 1 tbsp coriander seeds

  • 1 tbsp cumin seeds

  • 1 tsp salt

  • 1 tsp peppercorns

  • 300ml Kappacasien natural yogurt

  • 100ml water

Method

  1. Crush the coriander, cumin, salt and pepper in pestle and mortar.

  2. Heat the grill to medium and dust a baking sheet with a little flour.

  3. Mix the flour and crushed seasoning in a bowl.

  4. Stir in the yogurt and 100ml water, then mix well to form a soft dough.

  5. Divide the dough into 8 equal pieces, then shape into circles or ovals about ½cm thick.

  6. Dust lightly with a little flour.

  7. Grill on the baking sheet for 3-5 mins on each side until golden and puffed. Serve warm.
