Tofu & Miso Aubergine

A great way to use this super popular, and tasty tofu, from Clean Bean. This simple recipe from our volunteer Louise, uses mostly ingredients found at Get Loose.

Clean Bean Tofu in home compostable packaging

Ingredients

  • one block of tofu cut into cubes (Neil's Clean Bean tofu, click for blog post with more information)

  • 150 grams of white jasmine rice (or one of the other rices we stock)

  • 2 small aubergines

  • spring onions

  • 4 tbsp of soy sauce

  • 1 tbsp of honey

  • a drizzle of sesame oil

  • salt / pepper 

  • 1 tbsp of miso paste (white or brown as you wish!) 

  • 1 tsp of cornstarch 

  • a handful of sesame seeds

    Method

  • Drizzle 1 tsp each of soy sauce, sesame oil and honey on the tofu cubes and pan fry them. 

  • At the same time cook the jasmine rice. 

  • While that is cooking assemble the sauce in a bowl:

    • Remaining soy sauce, honey, sesame oil

    • salt / pepper 

    • 1 tbsp of miso paste

    • 1 tsp of cornstarch 

    • a handful of sesame seeds

  • Cook the aubergines in some sesame oil, when cooked turn up the heat of your pan and pour the sauce over them. Plate your dish, add spring onion and sesame to garnish.
